Ingredients

  • 8-10 Ice Cream Sandwiches (depending on the size of your springform pan)
  • 1 package of Oreo cookies (plus a few extra for garnishing)
  • 2 litres of your preferred ice cream (we used Cookies and Cream)
  • Chocolate syrup for drizzling

Instructions

  1. Step 1: Cut ice cream sandwiches in half lengthwise, then in half again widthwise. Arrange the pieces around the edge of a 10-inch springform pan to form a complete border. Place the slightly squished/tapered side facing in to help shape the border into a neat circle.
  2. Step 2: Crush the package of Oreo cookies in a sealed bag using a rolling pin or preferred tool until you have fine crumbs.
  3. Step 3: Pour the crushed Oreos into the center of the pan, inside the ice cream sandwich border. Use a spatula or potato masher to gently press and smooth the cookie crumbs into an even base.
  4. Step 4: (Optional) Drizzle chocolate syrup over the cookie crumb base to help hold it together and add extra flavor.
  5. Step 5: Scoop the softened ice cream into the center of the pan. If the ice cream is too hard, wait a few minutes until it softens slightly to avoid disturbing the crust and border while spreading.
  6. Step 6: Spread the ice cream evenly with a spatula until smooth.
  7. Step 7: Sprinkle some of the remaining crushed Oreos over the top of the ice cream. Do not add other decorations yet, as the cake needs to freeze solid first.
  8. Step 8: Cover the pan loosely with plastic wrap and freeze for at least 2 hours. Before serving, remove from the freezer and decorate with whipped cream, whole Oreos, chocolate syrup, or your favorite toppings.
