Instructions
- Prepare Pistachio Filling: Heat a large heavy-duty pan over medium heat. Add the chopped kataifi and butter, cooking while stirring occasionally until the kataifi turns golden brown and crispy. Remove from heat and transfer to a medium mixing bowl. Add the pistachio cream and gently mix to combine.
- Melt Chocolate: Melt the chocolate chips in the microwave in 30-second increments, stirring gently between each until smooth and fully melted. Alternatively, melt the chocolate over a double boiler.
- Stuff the Dates: Place the pitted dates on a parchment-lined sheet pan. Fill each date with about 1 teaspoon of the pistachio kataifi mixture. Drizzle generously with the melted chocolate, then sprinkle with a light drizzle of crushed pistachios if desired.
- Set and Chill: Transfer the prepared dates to the refrigerator and allow the chocolate to set for at least 15 minutes before serving or gifting.
Notes
- Store stuffed dates in an airtight container in the refrigerator for up to 1 month; they can be stacked once the chocolate is set.
