Ingredients
Scale
For the Cookies:
- 1 pouch (17.5 oz) Betty Crocker sugar cookie mix
- Flour as called for on cookie mix pouch (for cutout cookies)
- Butter as called for on cookie mix pouch
- Egg as called for on cookie mix pouch
For the Frosting and Assembly:
- 1 tub (16 oz) Betty Crocker rich & creamy vanilla frosting
- 2 black licorice wheels
- 36 round yellow candy sprinkles
- Black decorator gel frosting (for facial details)
- 2 boxes Hello Kitty fruit-flavored snacks
Instructions
- Prepare the Cookie Dough and Shape the Cookies: Preheat the oven to 350°F. Prepare the cookie dough according to the sugar cookie mix pouch instructions for cutout cookies, using the specified flour, butter, and egg. On a floured surface, roll the dough to approximately 1/4-inch thickness. Using a 2-inch round cutter, cut out 36 cookie rounds, rerolling scraps as needed. Place the rounds 1 inch apart on an ungreased cookie sheet. Use leftover dough to form small triangles and gently press two onto each round as ears to form Hello Kitty cat face shapes.
- Bake and Cool the Cookies: Bake the cookies in the preheated oven for 6 to 8 minutes, or until edges are lightly golden. Remove from oven and transfer carefully to a cooling rack. Allow the cookies to cool completely to prevent frosting from melting during decoration.
- Frost the Cookies: Once cooled, spread a generous and even layer of vanilla frosting over each cookie, covering the entire surface thoroughly.
- Decorate with Facial Features: Use black decorator gel to draw two eyes on each frosted cookie. Place one round yellow candy sprinkle in the center as the nose. Unroll the black licorice wheels and cut six small pieces per cookie. Arrange three pieces on each side of the face as whiskers to complete the facial features.
- Add the Fruit Snack Bows and Serve: Top each decorated cookie with one Hello Kitty fruit-flavored snack to represent the signature bow. Serve immediately or cover loosely with plastic wrap until serving time.
Notes
- Use a dough firm enough to hold shape; avoid soft/cakey recipes to maintain Hello Kitty details.
- Roll dough to about 1/4 inch thickness to prevent spreading and loss of shape in the oven.
- Chill cut cookies for 10-15 minutes before baking to keep edges sharp and faces defined.
- Allow cookies to cool completely before frosting to avoid melting the frosting.
- Use parchment paper between stacked decorated cookies to prevent smudging.
- Apply decorator gel lightly and keep a toothpick handy to correct imperfections.
- Store cookies at room temperature in an airtight container with parchment paper separating layers for up to 5 days.
- Freeze undecorated cookies up to 3 months or decorated cookies after freezing flat on a baking sheet to solidify frosting.
- Make cookies ahead and refrigerate to ease decorating tasks before serving.
