Bread:

  • 16 slices high-quality soft white sandwich bread (crusts removed)

Filling:

  • 1 English cucumber
  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh chives
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • Cracked black pepper, to taste

Instructions

  1. Prepare Bread: Remove crusts from the bread slices.
  2. Prepare Cucumber: Peel the English cucumber in stripes and thinly slice into 1/8-inch pieces.
  3. Drain Cucumber: Place cucumber slices on paper towels, sprinkle with salt, and let sit for 15-30 minutes. Pat dry.
  4. Make Spread: In a bowl, mix softened cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, and salt.
  5. Assemble Sandwiches: Spread herbed cream cheese on bread slices. Layer cucumber slices on half of the bread. Season with black pepper and top with remaining bread.
  6. Cut and Serve: Cut sandwiches into quarters with a sharp knife to make tea sandwiches. Serve immediately.
