For the Sourdough Starter:

  • 220 g active sourdough starter (100% hydration)
  • 120 ml water
  • 210 g strong bread flour
  • ½ tsp salt

Instructions

  1. Day 1: When your starter has almost doubled in size, mix water and half of the flour into a rough dough. Cover and let it rest for 30-60 minutes.
  2. Add the active sourdough starter, salt, the rest of the flour, and knead for 10 minutes.
  3. Transfer the dough to a greased bowl, cover, and let it rise for 4 hours with regular folding.
  4. Refrigerate the dough overnight.
  5. Day 2: Shape the dough into baguettes, let them rise, then bake at 240°C Fan for 15-20 minutes.

Notes

  • You can sprinkle some sesame seeds or poppy seeds on top before baking for added flavor.
  • Ensure your starter is active and bubbly for best results.
