For the Sourdough Starter:
- 220 g active sourdough starter (100% hydration)
- 120 ml water
- 210 g strong bread flour
- ½ tsp salt
Instructions
- Day 1: When your starter has almost doubled in size, mix water and half of the flour into a rough dough. Cover and let it rest for 30-60 minutes.
- Add the active sourdough starter, salt, the rest of the flour, and knead for 10 minutes.
- Transfer the dough to a greased bowl, cover, and let it rise for 4 hours with regular folding.
- Refrigerate the dough overnight.
- Day 2: Shape the dough into baguettes, let them rise, then bake at 240°C Fan for 15-20 minutes.
Notes
- You can sprinkle some sesame seeds or poppy seeds on top before baking for added flavor.
- Ensure your starter is active and bubbly for best results.
