Served over delicate angel hair pasta and garnished with fresh parsley and Parmesan, this dish is perfect for an easy, satisfying weeknight dinner.

Ingredients

Scale

Chicken and Seasoning

  • 1.5 lbs Boneless Skinless Chicken Breasts (or chicken thighs for extra richness)
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Vegetable Oil (for searing)

Creamy Sauce

  • 4 oz Cream Cheese (softened; low-fat or Neufchâtel for lighter version)
  • 3 tablespoons Unsalted Butter (or margarine)
  • 10.5 oz Cream of Chicken Soup (low or no sodium preferred)
  • 3 cloves Garlic (freshly minced)
  • ¾ cup Chicken Broth (low sodium preferred)
  • 1 packet Good Seasons Dry Italian Salad Dressing Mix (or homemade Italian seasoning)

Pasta and Garnishes

  • 16 oz Angel Hair Pasta (or penne/gluten-free pasta)
  • Chopped Fresh Parsley, to taste (for garnish)
  • Cracked Pepper, to taste (for garnish)
  • Grated Parmesan Cheese, to taste (optional, recommended for serving)

Instructions

  1. Season and Sear Chicken: Heat vegetable oil in a cast-iron skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear each side for 2-3 minutes until golden brown. Remove from heat.
  2. Prepare Creamy Sauce: In a mixing bowl, combine the softened cream cheese, unsalted butter, cream of chicken soup, minced garlic, chicken broth, and dry Italian dressing mix. Whisk together until smooth and creamy.
  3. Layer in Crock Pot: Lightly coat the inside of your crock pot with non-stick spray. Place the seared chicken breasts at the bottom, then pour the creamy sauce mixture evenly over the chicken.
  4. Slow Cook Chicken: Cover and cook on low for 3-4 hours, ensuring the chicken reaches an internal temperature of 165°F for safe consumption.
  5. Cook Pasta: Just before serving, cook the angel hair pasta according to the package instructions until al dente. Drain the pasta well.
  6. Serve: Either toss the pasta with some of the sauce or serve the pasta on the side. Serve the chicken whole or shredded over the pasta. Garnish with chopped parsley, cracked pepper, and grated Parmesan cheese as desired.

Notes

  • You can substitute chicken thighs for breasts for a richer flavor and juicier meat.
  • Use low-fat or Neufchâtel cream cheese and low-sodium broth and soup for a lighter version.
  • Homemade Italian seasoning can replace the dry salad dressing mix if preferred.
  • Angel hair pasta can be swapped with penne or gluten-free pasta according to preference or dietary needs.
  • Ensure the chicken reaches 165°F internally to guarantee it is fully cooked.
  • For a more decadent touch, sprinkle extra Parmesan on top before serving.
