- 1 red onion, diced
- 3 cloves of garlic, chopped
- 1 can mixed beans (240g), drained and rinsed
- 200g diced tomatoes

- 2 tbsp coconut oil

Instructions
- Prepare and fry zucchini: Cut the zucchini into approximately 3 cm pieces. Heat 2 tablespoons of coconut oil in a hot pan over medium-high heat. Season the zucchini with salt and fry for 10-12 minutes until golden brown and tender. Remove the zucchini from the pan and set aside.
- Sauté onion and garlic: Dice the red onion and chop the garlic. In the same pan, add the onion and garlic and sauté for about one minute until fragrant and softened.
- Add liquids and peanut butter: Stir in the diced tomatoes and coconut milk. Then, mix in the tablespoon of peanut butter thoroughly. Bring the mixture to a boil while stirring to combine all flavors evenly.
- Combine beans and zucchini: Stir the drained mixed beans and the fried zucchini back into the pan. Season the stir-fry with sambal oelek, black pepper, and remaining salt according to taste. Allow the mixture to heat through for a few minutes.
- Finish and serve: Just before serving, stir in one tablespoon of lemon juice for brightness. Garnish with freshly chopped parsley and serve hot.
