  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

This Creamy Tuscan Salmon recipe features pan-seared salmon fillets smothered in a rich and flavorful creamy sauce made with sun-dried tomatoes, garlic, spinach, and Parmesan cheese. Ready in just 25 minutes, it’s a perfect quick and elegant meal that’s both comforting and packed with vibrant Italian-inspired flavors.

Ingredients

Scale

Salmon

  • 4 salmon fillets (about 6 oz each)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil

Creamy Tuscan Sauce

  • 3 cloves garlic (minced)
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup heavy cream
  • 1 cup spinach (fresh)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Garnish

  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat to prepare for searing.
  2. Cook the Salmon: Place the salmon fillets in the hot skillet skin-side down if they have skin. Sear each side for about 4-5 minutes until the salmon is cooked through and easily flakes with a fork. Remove the salmon from the skillet and set aside to keep warm.
  3. Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for approximately 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes and cook for another 1-2 minutes to release their flavors. Pour in the heavy cream and bring the mixture to a gentle simmer. Add fresh spinach and cook until wilted. Then stir in grated Parmesan cheese and Italian seasoning until the cheese melts and the sauce becomes creamy. Adjust seasoning with salt and pepper to taste.
  4. Combine and Serve: Return the cooked salmon fillets to the skillet, spooning the creamy Tuscan sauce generously over the top. Garnish with freshly chopped parsley for added freshness and color. Serve the dish warm alongside your favorite sides like pasta, rice, or a fresh salad.

Notes

  • Make sure to pat the salmon dry before seasoning to achieve a nice sear.
  • If you prefer, you can substitute spinach with kale or arugula for a different flavor.
  • Sun-dried tomatoes packed in oil add richness, but if using dry ones, rehydrate them in warm water before chopping.
  • For a lighter version, consider using half-and-half instead of heavy cream.
  • This recipe pairs excellently with garlic mashed potatoes or crusty bread to soak up the creamy sauce.
