Instructions

  1. Prepare the Meatballs – In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, black pepper, and parsley. Mix gently until combined. Avoid overmixing. Roll the mixture into small 1-inch meatballs and set aside.
  2. Cook the Meatballs – Heat a large pot or Dutch oven over medium heat with olive oil. Sear the meatballs for 2-3 minutes per side until browned. Set aside.
  3. Sauté the Vegetables – In the same pot, add onion, celery, and garlic. Sauté until softened (3-4 minutes).
  4. Build the Soup Base – Add diced tomatoes and broth. Stir well. Season with Italian seasoning, salt, and black pepper. Return the meatballs to the pot and simmer for 15 minutes.
