Ingredients
Scale
Noodles
- 80 grams dried sweet potato noodles (dangmyeon) or your noodle of choice
Sauce
- 1 clove garlic, minced
- 2 tablespoons gochujang (Korean chili paste)
- 1 teaspoon toasted sesame oil
- 2 teaspoons fish sauce
- 1 tablespoon rice vinegar
- 3 tablespoons cream cheese
Garnish
- Toasted sesame seeds, to garnish
- Sliced green onions, to garnish
- Steamed broccoli (optional)
Instructions
- Cook the noodles: Prepare the sweet potato noodles by cooking them according to the package instructions until tender, then drain well.
- Prepare the sauce: In a small bowl, combine minced garlic, gochujang, rice vinegar, toasted sesame oil, and fish sauce, stirring until well mixed.
- Mix noodles and sauce: Return the drained noodles to the pot, add the cream cheese and the gochujang sauce mixture. Stir thoroughly over low heat until the cream cheese melts and coats the noodles evenly.
- Adjust consistency: If the sauce is too thick, add a splash of hot water to loosen it to your desired consistency, stirring well.
- Garnish and serve: Plate the creamy gochujang noodles, sprinkle generously with toasted sesame seeds and sliced green onions. Serve with steamed broccoli or your preferred vegetables on the side for a complete meal.
Notes
- Sweet potato noodles (dangmyeon) give an authentic chewy texture but feel free to substitute with other noodles like rice noodles or spaghetti.
- If you prefer a vegan version, substitute fish sauce with tamari or soy sauce and use vegan cream cheese.
- Adjust the amount of gochujang to control the spice level.
- Adding steamed broccoli or other veggies can increase the nutritional balance of the dish.
- The sauce thickens as it cools; add hot water when reheating to loosen.
