Ingredients
Scale
Chicken & Sauces
- 2 pounds boneless, skinless chicken breasts (or thighs for richer flavor)
- 1 can Rotel (diced tomatoes with green chilies) or any brand of diced tomatoes
- 1 can cream of chicken soup (or cream of celery for a different twist)
- 1 can cream of mushroom soup (or vegetable/vegan cream soups)
- 1 cup chicken broth (or vegetable broth for vegetarian)
Seasonings
- 1 teaspoon garlic powder (adjust to taste)
- 1 teaspoon onion powder (adjust to taste)
- 1 teaspoon paprika (optional for extra depth)
- Salt to taste
- Black pepper to taste
Cheeses & Pasta
- 8 ounces cream cheese (or any soft cheese)
- 2 cups shredded cheddar cheese (or mozzarella for gooey finish)
- 12 ounces spaghetti (or other pasta varieties)
- 1 tablespoon olive oil or butter (to keep pasta from sticking)
Garnish
- Fresh chopped parsley to taste (optional but recommended)
Instructions
- Layer Chicken: Place boneless, skinless chicken breasts into the crockpot and season generously with garlic powder, onion powder, salt, black pepper, and paprika to infuse the meat with flavor.
- Add Sauces: Pour the can of Rotel, cream of chicken soup, and cream of mushroom soup over the chicken. Finally, add chicken broth on top without stirring to keep layers intact during cooking.
- Cook Chicken: Cover the crockpot and cook on low for 6 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
- Shred Chicken: Use two forks to shred the cooked chicken directly inside the crockpot, mixing it gently with the sauce base.
- Mix in Cheese: Add cream cheese and 1.5 cups of shredded cheddar cheese into the crockpot, stirring gently. Cook for an additional 15-20 minutes to melt the cheeses and create a creamy texture.
- Cook Spaghetti: While the cheese is melting, bring a large pot of salted water to a boil. Cook the spaghetti until al dente, about 8-10 minutes, then drain.
- Combine Ingredients: Add the cooked spaghetti to the crockpot and gently mix until the pasta is well coated with the creamy chicken sauce.
- Melt Cheese Topping: Sprinkle the remaining cheddar cheese on top of the spaghetti mixture, cover the crockpot again, and let it melt for 5-10 minutes creating a cheesy crust.
- Serve Warm: Dish out the creamy chicken spaghetti onto plates, garnishing with fresh chopped parsley and additional black pepper if desired, and serve immediately for ultimate comfort.
Notes
- You can substitute chicken thighs for breasts for a richer, more flavorful dish.
- For a vegetarian version, replace the chicken with mushrooms or plant-based meat and use vegetable broth and vegan cream soups.
- If you prefer less heat, use plain diced tomatoes instead of Rotel.
- Adding paprika is optional but adds a subtle depth of flavor and color.
- Use olive oil or butter to toss the pasta after draining to prevent sticking before mixing it into the crockpot.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the microwave or on the stovetop.
