  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate (optional)

Instructions

  1. Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature if they are not already soft. This softening will help them blend more smoothly.
  2. Mix Ingredients: Combine the cream cheese, butter, powdered sugar (or erythritol), and instant coffee until the mixture is smooth. Using a hand mixer will provide the smoothest results, but stirring with a fork works as well.
  3. Shape Truffles: Spread the mixture into a container or freeze it briefly until firm enough to scoop. Use a mini cookie scoop to form balls and place them onto a parchment-lined plate.
  4. Freeze Until Firm: Freeze the shaped truffle balls until they are firm to the touch. If you spread the mixture in a container, you can cut them into bars or squares instead of scooping balls.
  5. Optional Chocolate Dip: If desired, melt the chocolate chips and dip the truffles in the melted chocolate. For a smoother dip, stir half a teaspoon of oil into the melted chocolate. Allow the chocolate to set before cutting the truffles in half, if you want to create bite-sized pieces.
  6. Storage: Refrigerate or freeze any leftovers to keep them fresh until ready to serve.
