Instructions
- Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature if they are not already soft. This softening will help them blend more smoothly.
- Mix Ingredients: Combine the cream cheese, butter, powdered sugar (or erythritol), and instant coffee until the mixture is smooth. Using a hand mixer will provide the smoothest results, but stirring with a fork works as well.
- Shape Truffles: Spread the mixture into a container or freeze it briefly until firm enough to scoop. Use a mini cookie scoop to form balls and place them onto a parchment-lined plate.
- Freeze Until Firm: Freeze the shaped truffle balls until they are firm to the touch. If you spread the mixture in a container, you can cut them into bars or squares instead of scooping balls.
- Optional Chocolate Dip: If desired, melt the chocolate chips and dip the truffles in the melted chocolate. For a smoother dip, stir half a teaspoon of oil into the melted chocolate. Allow the chocolate to set before cutting the truffles in half, if you want to create bite-sized pieces.
- Storage: Refrigerate or freeze any leftovers to keep them fresh until ready to serve.
