Instructions

  1. Prepare the Cinnamon Roll Dough: Bake store-bought cinnamon roll dough according to package instructions or use homemade cinnamon rolls. Allow rolls to cool completely, then crumble into a large mixing bowl until broken into small pieces.
  2. Make the Truffle Filling: Add softened cream cheese, powdered sugar, vanilla extract, and ground cinnamon to the crumbled cinnamon rolls. Mix thoroughly until the mixture is well combined and smooth. Place the bowl in the refrigerator for 30 minutes to allow the mixture to firm up.
  3. Form the Truffles: Using a small cookie scoop or your hands, scoop out the chilled mixture and roll it into small balls approximately 1 inch in diameter. Arrange the formed truffles on a baking sheet lined with parchment paper. Refrigerate again for 15 to 30 minutes to firm them further.
  4. Prepare the Coating: In a microwave-safe bowl, melt the white chocolate chips or candy melts in 30-second intervals, stirring between each until completely smooth. Optionally, stir in 1 tablespoon of coconut oil to thin out the chocolate for easier dipping.
  5. Coat the Truffles: Using a fork or dipping tool, dip each chilled truffle into the melted white chocolate, allowing excess chocolate to drip off. Place the coated truffles back onto the parchment-lined baking sheet. While the coating is still wet, sprinkle with additional ground cinnamon or crushed nuts if desired for added texture and decoration.
