Dough:
- 3/4 cup (1½ sticks) unsalted butter, at room temperature
- 1/2 cup powdered sugar
- 1½ teaspoons vanilla extract
- 1/2 teaspoon salt
- 1½ cups all-purpose flour
- 1 large egg white
- 1 tablespoon water
Filling:
- 1/4 cup granulated white sugar
- 1½ teaspoons ground cinnamon
Icing:
- 1/2 cup powdered sugar
- 2 tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- PREPARE THE DOUGH: In a medium-sized mixing bowl, cream together the butter, sugar, vanilla, and salt. Add the flour and stir until the dough comes together. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least an hour.
- ROLL THE DOUGH: Roll the chilled dough into a 9×12-inch rectangle on a floured surface. Brush with egg white wash and sprinkle with cinnamon sugar. Roll into a log, wrap, and freeze until firm.
- BAKE THE COOKIES: Preheat oven to 350°F. Slice the dough into rounds, place on baking sheets, and bake for 12-15 minutes until golden brown.
- ICE THE COOKIES: Make icing by whisking cream into sifted powdered sugar. Drizzle or spread the icing on the cooled cookies.
Notes
- You can add chopped nuts or raisins to the filling for extra flavor.
