Description
This decadent Chocolate Tofu Pudding is a creamy and rich dessert made with silky tofu and dark chocolate. It combines antioxidants of dark chocolate with the protein and smooth texture of silken tofu, sweetened naturally with maple syrup to create a luscious, dairy-free, and vegan treat that can be enjoyed immediately or chilled for a firmer consistency.
Ingredients
Scale
Chocolate Mixture
- 1 cup 70% dark chocolate (150 grams)
- ½ tablespoon coconut oil
Pudding Base
- 2 teaspoons cocoa powder
- 2 tablespoons maple syrup (or more as needed)
- Pinch of salt
- 1 pound silken tofu (16 ounce block), liquid removed and blotted with paper towels if needed
Instructions
- Melt the Chocolate: Place the dark chocolate and coconut oil in a microwave-safe bowl. Microwave on high in 20-second bursts, stirring after each interval, until the chocolate has completely melted and the mixture is smooth.
- Blend Ingredients: Transfer the melted chocolate mixture to a high-speed blender. Add the cocoa powder, maple syrup, salt, and the silken tofu. Blend on high until the mixture is perfectly smooth and creamy, with no lumps remaining.
- Serve or Chill: Divide the tofu pudding evenly into ramekins or serving glasses. You can serve it immediately for a soft pudding texture or refrigerate for at least 1 hour to allow it to set into a firmer consistency if preferred.
Notes
- Use 70% dark chocolate for a rich flavor and antioxidant benefits, but dark chocolate with any cocoa content can be substituted based on preference.
- Adjust the maple syrup sweetness to taste.
- For a firmer pudding, refrigerate for several hours or overnight.
- Ensure the tofu is silken type for the creamiest texture; regular tofu will not yield the same smoothness.
- This pudding is naturally vegan and dairy-free.
