  • 2 tbsp (40g) maple syrup
  • Pinch of salt
  • 1 cup (180g) dark chocolate chips, melted

Instructions

  1. Blend Wet Ingredients: In a food processor, combine the fresh strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and a pinch of salt. Blend until smooth and well mixed.
  2. Add Coconut: Add the unsweetened shredded coconut to the mixture in the food processor and blend again until the ingredients are thoroughly combined, forming a sticky, cohesive mixture.
  3. Press and Freeze: Press the mixture firmly into a lined loaf pan, ensuring an even layer. Place the pan in the freezer and chill for at least 1 hour to let the bars firm up.
  4. Slice Bars: After chilling, carefully lift the mixture out of the pan using the lining paper and slice it into 8 equal bars.
  5. Coat with Chocolate: Dip each bar into the melted dark chocolate or coat thoroughly, then sprinkle additional freeze dried strawberries on top for extra flavor and texture.
  6. Set Chocolate: Place the chocolate-coated bars back into the fridge or freezer to allow the chocolate to set completely.
