Instructions
- Preheat and prepare pan: Preheat your oven to 180°C (350°F). Grease a loaf pan and line it with baking paper to prevent sticking and ensure easy removal.
- Make herb and garlic swirl: In a small bowl, mix together the chopped fresh rosemary, parsley, crushed garlic, olive oil, and a pinch of salt. This mixture will be swirled into the bread for flavor.
- Mix dry ingredients: In a separate large bowl, whisk together the plain flour, baking soda, cooking salt, dried oregano, and dried thyme.
- Combine wet ingredients: In another bowl, whisk the plain yogurt, milk, and eggs until well combined.
- Combine wet and dry mixtures: Gently fold the wet ingredients into the dry ingredients until just incorporated. Avoid overmixing to keep the bread tender.
- Layer the batter and swirl: Spoon one-third of the batter into the prepared loaf pan. Spread one-third of the herb and garlic mixture on top, then sprinkle some cheese slices. Repeat this layering process two more times until all batter, herbs, and cheese are used.
- Bake the bread: Bake the loaf uncovered for 30 minutes. Then, cover the loaf with foil and continue baking for an additional 20 minutes to ensure even cooking and prevent over-browning.
- Cool and serve: Remove the bread from the oven, let it cool in the pan for 5 minutes, then transfer it to a cooling rack to cool completely before slicing and serving.
