Instructions

  1. Preheat the Oven: Preheat your oven to 190°C (374°F) and line a baking sheet with parchment paper to prepare for baking the pastry rings.
  2. Prepare the Pastry Rings: Using a pastry cutter, cut rings from the puff pastry sheet. For half of these rings, cut a smaller hole in the center to create a ring shape. Place the rings with holes on top of the whole rings, pressing gently to adhere the layers together.
  3. Bake the Pastry Rings: Arrange the puff pastry rings on the lined baking sheet. Brush the tops evenly with the egg yolk and milk mixture to help them develop a golden brown color. Bake in the preheated oven for about 20 minutes until they are puffed and golden. Once baked, allow them to cool completely to maintain crispiness.
  4. Make Vanilla Cream: In a saucepan, heat most of the milk over medium heat until warm. In a separate mixing bowl, combine the remaining milk with egg yolks, sugar, cornstarch, flour, and a pinch of salt, whisking until smooth. Gradually pour the hot milk into the egg mixture while stirring constantly to temper the eggs.
  5. Thicken the Cream: Return the combined mixture to the saucepan and cook over medium heat, stirring continuously until the mixture thickens into a smooth custard-like consistency. Remove from heat and stir in the vanilla extract and butter. Cover the cream and let it cool completely.
  6. Assemble Your Delights: Once the pastry rings have cooled and the vanilla cream is set, spoon the cream into the centers of each ring. Top generously with fresh blueberries and finish by dusting lightly with powdered sugar before serving.
