Oat Base:
- 1 cup old-fashioned oats

- ¼ tsp baking soda
- ¼ tsp salt

- 6 tbsp unsalted butter, melted (or coconut oil)
- 1 tsp vanilla extract
Blueberry Topping:
- 1 cup blueberries (fresh or frozen)
- ¼ cup granulated sugar
- 2 tsp cornstarch
Instructions
- Preheat oven: Preheat the oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, flour, brown sugar, baking soda, salt, and cinnamon.
- Add wet ingredients: Stir in melted butter and vanilla extract until the mixture is crumbly.
- Prepare the base: Press half of the oat mixture firmly into the pan to form the base.
- Make the blueberry topping: In a separate bowl, toss blueberries with sugar and cornstarch. Spread them over the oat base.
- Add the topping: Crumble the remaining oat mixture on top of the blueberries, gently pressing down.
- Bake: Bake for 35-40 minutes until golden brown and the blueberries are bubbly.
- Cool and cut: Allow the bars to cool completely, then lift them out using the parchment paper and cut into squares.
