- 185 g blueberries (fresh or frozen, thawed)
- 135 g lukewarm water
- 1 1/2 teaspoon active dry yeast (or instant yeast)
- 2 Tablespoons granulated sugar
- 440 g bread flour (plus extra for dusting)
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 2 litres water
- 1 Tbsp honey or brown sugar

- Cooking the Blueberries: Heat blueberries in a saucepan until juicy and set aside.
- Prepare Dough: Combine water, yeast, and sugar. Add flour, salt, blueberries, and vanilla. Knead for 10 minutes.
- Rise: Let the dough double in size in an oiled bowl.
- Shape: Divide, shape, and let dough rest.
- Form Bagels: Shape dough into bagels and let puff.
- Boil: Boil bagels in water with honey or sugar.
- Bake: Bake until golden brown.
- Cool: Let cool before slicing and serving.
Notes
- You can skip pre-cooking the blueberries for a lighter color.
- Ensure the bagel holes are large as they will shrink when baked.
- Use a light-colored pan or insulate the pan to prevent darkening the bagel bottoms.
