Vegetables
- 2 medium zucchini, sliced into spears
- 1/2 medium onion, sliced
- 1 tablespoon butter
- 1 tablespoon avocado oil (or your favorite cooking oil)
- 1 teaspoon garlic powder
- 1–2 tablespoons soy sauce
- Salt and pepper, to taste
Chicken and Sauce
- 1½ pounds boneless skinless chicken breast, cut into cubes
- 2 tablespoons butter
- ¼ cup soy sauce
- 2 tablespoons minced garlic
- 1 teaspoon minced ginger (squeeze bottle ginger preferred)
- 3 tablespoons honey
- 3 tablespoons brown sugar (loosely packed)
For Serving
- Yum yum sauce and/or sriracha
Instructions
- Preheat the griddle: Set your griddle to low or medium-low heat to prepare for cooking all ingredients evenly.
- Prepare the fried rice: Begin cooking the fried rice directly on the griddle as per the fried rice instructions.
- Make the hibachi sauce: In a medium bowl, whisk together ¼ cup soy sauce, 2 tablespoons minced garlic, 1 teaspoon minced ginger, 3 tablespoons honey, and 3 tablespoons brown sugar until well combined. Set aside.
- Sauté the vegetables: When the fried rice is nearly done, move it to the cooler side of the griddle. In the hotter zone, add 1 tablespoon butter and 1 tablespoon avocado oil, spreading it evenly. Add sliced zucchini and onions, then season with 1 teaspoon garlic powder, 1-2 tablespoons soy sauce, salt, and pepper. Sauté until vegetables are tender, then move them aside on the griddle.
- Cook the chicken: Add 1 tablespoon avocado oil to the hot zone of the griddle. Spread it with your spatula, then add cubed chicken breast pieces, ensuring they are spaced out for even searing. Let the chicken cook undisturbed for about 2 minutes to develop a nice sear.
- Add butter and continue cooking chicken: Toss 2 tablespoons butter with the chicken after 2 minutes and continue sautéing until chicken is almost cooked through.
- Add hibachi sauce: Pour the prepared hibachi sauce onto the chicken and toss to coat evenly. Continue cooking for about 2 minutes until the sauce slightly thickens and the chicken is fully cooked.
- Serve: Transfer the cooked fried rice, hibachi chicken, zucchini, and onions to a large serving plate. Serve immediately topped with your choice of yum yum sauce and/or sriracha for extra flavor.
