  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat Oven: Preheat oven to 375°F. Place paper baking cups into muffin pan and set aside.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients: In a large bowl, combine pumpkin, granulated sugar, and brown sugar. Beat in eggs, vegetable oil, and vanilla extract. Gradually add the flour mixture, stirring until smooth. Fill muffin tins 3/4 full.
  4. Prepare Cream Cheese Mixture: In a medium bowl, beat cream cheese until smooth. Add sugar, egg yolk, and vanilla extract. Mix until well combined.
  5. Swirl Cream Cheese: Top each muffin with a tablespoon of cream cheese mixture. Use a toothpick to swirl it into the batter.
