Ingredients

Scale

Salmon Bites

  • 2 lbs Salmon Filet
  • 2 tbsp Mayonnaise
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 2 tsp Garlic Paste
  • Garlic Salt and Black Pepper to taste

Bang Bang Sauce

  • 3/4 cup Mayonnaise
  • 1/2 cup Thai Sweet Chili Sauce
  • 1 tbsp Sriracha
  • 1 tbsp Soy Sauce
  • 1 tsp Honey
  • 1 clove Garlic, grated or minced

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) ensuring it reaches the right temperature for roasting the salmon bites evenly and crisply.
  2. Prepare Salmon: Pat the salmon dry using paper towels. Remove the skin by carefully sliding a sharp knife between the flesh and the skin, holding the skin taut as you go. Trim off any remaining bits of skin.
  3. Cut Salmon: Cut the salmon into chunks about 1 to 1.5 inches in size. Transfer these chunks into a large mixing bowl.
  4. Make Seasoning Mix: In a small bowl, combine 2 tablespoons of mayonnaise, onion powder, garlic powder, chili powder, and garlic paste. Mix well. Then season the salmon chunks in the bowl with garlic salt and black pepper as desired.
  5. Coat Salmon: Pour the seasoned mayo mixture over the salmon bites, ensuring each chunk is well coated. Arrange the salmon pieces on a baking sheet lined with parchment paper or lightly greased, placing them 1 to 2 inches apart to avoid overcrowding and to promote crispiness.
  6. Roast Salmon: Place the baking sheet in the preheated oven and roast the salmon bites for 10 minutes until they are mostly cooked through.
  7. Broil for Crispiness: Switch the oven to broil and cook the salmon bites for an additional 2 to 3 minutes until the tops turn golden brown and crispy. Watch closely to prevent burning.
  8. Prepare Bang Bang Sauce: While the salmon is roasting, whisk together mayonnaise, Thai sweet chili sauce, sriracha, soy sauce, honey, and grated garlic in a medium bowl until smooth and well combined.
  9. Serve: Once the salmon bites are cooked and golden, drizzle the prepared bang bang sauce over them or serve it on the side for dipping. Enjoy warm as a delightful appetizer or snack.

Notes

  • Ensure salmon is fully thawed if using frozen before skin removal for easier handling.
  • Keep an eye on the broiler step as the bites can burn quickly due to the sugars in the sauce and mayo mixture.
  • For a gluten-free option, use tamari or gluten-free soy sauce in the bang bang sauce.
  • Adjust the amount of sriracha to control the heat level of the sauce according to your taste.
  • These bites are best served immediately for maximum crispiness.
