  • 1 taco-size flour tortilla (gluten-free tortillas work great, too!)
  • 1 ripe but firm banana (peeled)
  • 3 tablespoons Nutella (divided)
  • 2 tablespoons shredded coconut

Instructions

  1. Spread the base: Lay one of the tortillas flat on a cutting board, and spread 2 tablespoons of the chosen spread (peanut butter, cream cheese, or Nutella) evenly over the top to create a smooth layer.
  2. Position the banana: Place the peeled banana at one end of the tortilla. If the banana is quite curved, carefully straighten it out a bit, even if it cracks a little, for easier rolling.
  3. Roll up tightly: Starting at the end with the banana, roll the tortilla snugly around it, similar to rolling someone up tightly in a rug. Once rolled, place the tortilla roll seam-side down on the cutting board to keep it secure.
  4. Add topping: Take the remaining 1 tablespoon of the chosen spread and spread it evenly over the top of the tortilla roll. Immediately sprinkle your topping choice over the roll—chopped peanuts for peanut butter, crushed freeze-dried strawberries for cream cheese, or shredded coconut for Nutella.
  5. Slice and serve: Using a sharp knife, slice the tortilla roll into roughly 1-inch sushi pieces. Arrange on a plate and serve with chopsticks for a fun presentation.
