  • Author: Lila
  • Total Time: 1 hour 10-15 minutes
  • Yield: 12 slices 1x

Description

Deliciously moist banana bread made with ripe bananas and topped with a buttery, cinnamon-spiced brown sugar streusel. This easy-to-make recipe yields a perfect loaf that’s ideal for breakfast, snacks, or dessert.

Ingredients

Scale

For the Banana Bread

  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

For the Streusel Topping

  • 4 tablespoons cold unsalted butter, cut into pea-sized pieces
  • ⅓ cup light brown sugar
  • ½ cup all-purpose flour
  • ¾ teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat oven to 325°F (163°C). Generously spray a 9×5 inch bread pan with cooking spray, making sure to coat all sides and crevices. Set aside.
  2. Cream Butter and Sugar: In a stand mixer bowl fitted with a paddle attachment, cream the room temperature butter and granulated sugar on medium-high speed for 3 minutes. Scrape down the bowl sides and bottom with a spatula to ensure even mixing.
  3. Add Eggs: Add the eggs one at a time, beating well and scraping the bowl after each addition.
  4. Incorporate Bananas: Mix in the mashed ripe bananas on low speed until fully incorporated.
  5. Combine Dry Ingredients: Add the all-purpose flour, baking soda, and salt. Mix on the lowest speed until just combined without any flour streaks to avoid overmixing.
  6. Pour Batter: Pour the batter into the prepared bread pan. Use the back of a spoon to gently even out the surface and make sure the batter fills all four corners evenly. Set aside while you prepare the streusel topping.
  7. Make Streusel Topping: In a medium bowl, combine cold butter pieces and light brown sugar. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  8. Add Flour and Cinnamon: Stir in the all-purpose flour and ground cinnamon, continuing to mix until the topping becomes crumbly with small clumps.
  9. Top the Batter: Sprinkle the streusel topping evenly over the banana bread batter in the pan.
  10. Bake: Bake in the preheated oven for 55 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out with a few moist crumbs attached. Baking times may vary, so begin checking after 55 minutes.

Notes

  • Overmixing the batter can make the bread tough; mix dry ingredients until just combined.
  • Use ripe bananas with brown spots for optimal sweetness and moisture.
  • For easy removal, let the bread cool for 10-15 minutes in the pan before transferring to a wire rack.
  • Store leftover banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
