Cream Cheese Mixture:
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 4–5 fresh jalapeños, finely chopped (seeds removed)
Additional Ingredients:
- 15 eggroll wrappers
- Vegetable oil for frying
Instructions
- Mix Cream Cheese Filling: In a bowl, combine softened cream cheese and shredded cheddar. Add crumbled bacon and chopped jalapeños. Season with salt and pepper.
- Fill Eggroll Wrappers: Place an eggroll wrapper on a flat surface. Spoon 2 tablespoons of filling in the center. Moisten edges, fold bottom corner over filling, fold sides in, and roll tightly.
- Fry Eggrolls: Heat vegetable oil in a skillet to 350°F (175°C). Fry eggrolls in batches for 2-3 minutes per side until golden and crispy.
- Drain and Serve: Place fried eggrolls on paper towels to remove excess oil before serving.
