Description

A delicious and hearty Bacon, Egg, and Cheese Bagel Breakfast Sandwich recipe featuring baked bacon and a smooth cottage cheese egg bake, perfect for a satisfying morning meal or preparing ahead for the week.

Ingredients

Scale

Egg Bake

  • 18 eggs
  • 2 cups cottage cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 tablespoons chives (optional)

Bacon

  • 12 slices bacon

Sandwich Assembly

  • 12 slices cheese
  • 12 bagels
  • oil spray (cooking spray)

Instructions

  1. Preheat the oven: Heat your oven to 350°F to prepare for baking the bacon and the egg mixture.
  2. Bake the bacon: Line a sheet pan with foil or parchment paper, arrange the bacon slices in a zigzag N shape, and bake for 30 to 40 minutes, flipping halfway through. Once cooked, set aside to cool.
  3. Prepare egg bake pan: Spray a separate parchment-lined sheet pan generously with cooking spray to prevent sticking.
  4. Blend egg mixture: In a blender, combine the eggs, cottage cheese, garlic powder, onion powder, salt, and pepper. Blend until smooth and pour carefully into the prepared pan.
  5. Add chives and bake: Sprinkle chives evenly over the egg mixture if using, then bake for 15 to 20 minutes until the eggs are set in the center. Let cool slightly before slicing into 12 portions.
  6. Assemble sandwiches: Slice bagels in half and assemble each sandwich by layering a slice of the baked egg mixture, a slice of cheese, and bacon on the bottom half, then topping with the bagel top. Serve immediately or refrigerate for later.

Notes

  • For crispier bacon, use a wire rack on a baking sheet instead of laying bacon directly on foil.
  • Substitute bagels with English muffins or toast for variety.
  • Omit chives for a milder flavor or replace with fresh herbs like parsley or green onions.
  • Egg bake can be made ahead and stored in the fridge for up to 3 days.
  • Reheat assembled sandwiches in the oven or microwave before serving.
