Description

Brown Sugar Pop Tart Cookies combine the nostalgic flavors of a classic pop tart with the soft, chewy texture of a cookie. Filled with a cinnamon brown sugar mixture and topped with a sweet glaze, these cookies are a delightful treat perfect for any occasion.

Ingredients

Scale

Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Filling

  • 1 cup brown sugar
  • 1 tablespoon cinnamon

Icing

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • Sprinkles (optional, for decoration)

Instructions

  1. Cream Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring just until combined.
  4. Prepare Filling: In a small bowl, mix the brown sugar and cinnamon together and set aside.
  5. Divide and Roll Dough: Split the dough into two equal portions. On a floured surface, roll out each portion to about 1/4 inch thick.
  6. Cut Dough into Rectangles: Cut the rolled dough into 3×4 inch rectangles. Repeat for the second portion of dough.
  7. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Assemble Cookies: Place a tablespoon of the cinnamon brown sugar filling in the center of one dough rectangle, then cover with another rectangle, sealing the edges securely to enclose the filling.
  9. Repeat Assembly: Continue assembling all cookies in this manner until all dough and filling are used.
  10. Bake: Bake the cookies for 12-15 minutes or until they are lightly golden around the edges. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  11. Prepare Icing and Decorate: Mix the powdered sugar with 1 to 2 tablespoons of milk until smooth. Drizzle over the cooled cookies and optionally top with sprinkles before the icing sets.

Notes

  • For best sealing of edges, gently press with a fork or your fingers to prevent filling from leaking during baking.
  • Adjust milk quantity in the icing to achieve desired drizzle consistency.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • These cookies can be frozen before baking; thaw and bake as directed.
  • Optional: substitute brown sugar in the filling with coconut sugar for a slightly different flavor.
