For the Gluten-Free Summer Spaghetti:
- 1 lb. (2 8 oz. boxes) Pamela’s Spaghetti
Additional Ingredients:
- 4 Tablespoons extra virgin olive oil (divided)
- 4 cloves garlic (minced)
- 4 slices bacon (cooked and crumbled (optional))
- 3 cups fresh tomatoes (diced)
- 1/4 cup fresh basil (sliced thin)
- Fresh parmesan cheese (for serving, optional)
Instructions
- Cook the Spaghetti: Cook the spaghetti according to the package directions and prep the rest of the ingredients while the pasta is cooking.
- Toss with Olive Oil: When the pasta is done, add the drained pasta to a serving bowl and toss with 2 tablespoons of the extra virgin olive oil.
- Sauté Garlic: Heat the remaining 2 tablespoons of extra virgin olive oil in a small pot or skillet and add the garlic. Cook on medium-low heat for a few minutes until the garlic is fragrant. Pour over the spaghetti and toss to combine.
